This was actually supposed to be more of breakfast, but I was running around like mad at work and didn't have time to eat when I should have. Served around 12:30pm.

Served around 8:45pm. I was starving, so while the rest of dinner was cooking, I whipped up the fabulous recipe Amanda left in the comments over here - feta mint dip! Served up with some low calorie pita!

For our salad, I mixed cherries, cherry tomatoes, scallions and arugula once again, with a dab of low fat ranch dressing.
I'd prepared beans in the crockpot overnight (in the juices from the roast chicken carcass, yum) and threw a handful of those into the pan with the vegetables, along with tomato sauce and spices. I stirred in cooked ground turkey and fresh pasta, plated it and topped each serving with a bit of fresh mozzarella and chives.
Really, it was just okay. Ben wasn't a fan of this dish. I was so hungry that my judgment was clouded - I inhaled it!
