I ended up with a lot of random ingredients piled in my fridge, and when I added them all up, they equaled quiche.
Katie's Dinner Quiche
1 pie crust of your choosing
1 bunch spinach
3 cloves garlic
1 tablespoon olive oil
1/2 cup mushrooms, sliced
1 cup gruyere cheese, shredded
1.5 cups half and half
pinch of nutmeg
salt and pepper to taste
Preheat oven to 350 degrees.
Thinly slice the garlic Rinse and dry the spinach. Tear into small pieces. In a skillet over medium heat, add 1/2 table spoon of olive oil. After one minute, add the sliced garlic and cook for 30 seconds before adding the torn spinach, a handful at a time. Cook until all spinach is wilted. Season with salt and pepper. Drain, remove from skillet and set aside.
Return skillet to heat and add the remaining 1/2 tablespoon oil. Add sliced mushrooms and cook until they sweat. Remove from heat and set aside.
Beat eggs in a bowl. Add half and half, nutmeg and a dash of salt and pepper. Beat for about 2 minutes to combine. Set aside.
Spread 1/2 of cheese into bottom of pie crust. Layer spinach mixture on top of the cheese. Then layer the mushrooms. Top with remaining cheese and sprinkle with pepper. Pour egg mixture over the layers to the top of the crust.
Bake for about 60 minutes. Cool for at least 15 minutes before slicing and eating.
